I'm a common roadside or garden perennial 'weed' with edible young leaves and seeds that make wonderful dock seed crackers (recipe on website). My yellow taproots are used as a traditional medicine and they help break up compacted soil. Immature seed spikes can be used in bouquets as well. So wonderful that you better not call me a 'weed'!

You don't gotta do much for me except let seeds meet soil. Cover so the birds don't gobble me up first. I don't mind frost, drought, or heat but for the mildest greens and abundant seeds give me a drink now and then.

Harvest young leaves until they are too sharp to eat. Wait for seeds to turn a deep bronze-chocolate before collecting.
